Basic peppercorns – it is not just black and white! There was a time in history when pepper was more valuable than gold, so it was also used as a currency. It is still the most widely used spice and in value it takes 20% of the world’s spice trade. It is also known as the king of spices. Different types of pepper are almost found in every household. I don’t think there is anyone who is not familiar with the two most common varieties of pepper, the white and the black one. We use them in Hungarian dishes as well.

White pepper: Its taste is softer, because the ripe berries are soaked in water for 8-10 days after picking, and then the seeds are broken out of it. White pepper is great for flavoring white foods and sauces.

Black pepper: Black pepper is the most widely used type of pepper. It is picked just before ripening, and the yellow berries turn dark later.

Green pepper: Green pepper is becoming more and more widespread in Hungary. An excellent choice for red meats and sauces. It tastes fruitier and it’s not pungent.

Pink pepper: Pink pepper is not really a pepper, as it belongs to the sumac family. It is sweet and not pungent; it tastes like juniper berries. It is also a perfect addition to fish, poultry, and even to sweets.

Chocolate Long Pepper: It got its name from its elongated cluster-like shape. It has the character of cocoa, more like dark chocolate. Slightly spicy and makes the tongue a little numb. Its aroma makes it perfect for game dishes, vegetables and fruits.

Sichuan pepper: Citrus-flavored, fiery, an absolute essential ingredient in Asian cuisine. Its strongly aromatic taste comes from the orange peel that is covering the seeds. The black seeds inside are hard and tasteless, so the dried spice doesn’t contain it. Sichuan pepper works perfectly as a marinade for meats and for almost every dish in Asian cuisine.

Voatsiperifery Pepper - Wild jungle pepper: This very rare variety of pepper grows so high that only 1.5 tons of it is harvested annually in Madagascar. It is most often used as table pepper. Its aroma is smooth and spicy.
